INGREDIENTS:
4 chicken breasts
1 head of broccoli (chopped)
1/2 bag of baby carrots (chopped)
1/2 large red onion (diced)
1 large handful of green olives (sliced)
chicken broth
cinnamon
ground ginger
cumin
cayenne pepper
sea salt
black pepper
Sri Racha (optional)
DIRECTIONS:
Dice or cut the chicken breasts in into strips and boil until cooked about 80% through (you want to finish them off when added to the rest of the ingredients). Cover the bottom of a wok in olive oil and begin to saute the carrots on medium-high. After a few minutes, add the broccoli and onions. Saute all until crisply tender and then add the chicken. Cover the chicken with cinnamon, 2-3 healthy dashes of ginger, 2-3 dashes of cumin, a dash of cayenne pepper, 2 dashes of salt and black pepper (now is when you’d add the Sri Racha if you like it spicy). Mix until all the ingredients are evenly covered in the seasoning. Add chicken broth to the wok, cover and lower heat. Simmer for 5-7 minutes, adding the olives in the last minute of cook-time. Serve and enjoy!
