
INGREDIENTS:
2lb of grass-fed, ground beef
1/2 large red onion (diced)
1 cup of almond meal
2 eggs
1 can of tomato paste (I used a 12oz can)
5 cloves of crushed/minced garlic
2-3 tbsp of peperocini peppers (de-seeded and minced, or you can by the pre-sliced ones and just mince those)
2-3 tbsp of kalamata olices (de-pitted and minced)
1/2 tbsp of sea salt
2 tbsp of dried basil
1 tbsp of oregano
Black pepper to taste
Bacon
DIRECTIONS:
Pre-heat the oven to 350 degrees. Thoroughly mix all ingredients by hand in a large mixing bowl. Place meat mixture into a glass baking dish and form it into a loaf (or a heart for Valentine’s Day if you wanna get all romantical and shit). Layer the top of the loaf with strips of uncooked bacon. Depending on your oven, cooking time should be about an hour - but the meat inside should no longer be pink and the bacon on top should be crispy.
